The University of New England in Armidale, Australia adopted Moodle back in August and opted to jump right to Moodle 2.0. Sleek and minimalist, this theme for 2.0 doesn't seem to take advantage of the navigation block. So despite it's development for 2.0, installing this theme, Broad Study, will give your site a clean, traditional Moodle styling with a custom horizontal menu. Note that the theme credit goes to @stawebteam according to this Tweet. Compared to their current Moodle I'd say its very consistent.
